My kids were looking for something to get excited about for the 4th of July.

Something different. Something chocolately.

These S'mores cupcakes sure did the trick.

And the best part is: they are quick and easy, and used a combination of mix and from scratch.

To add some red, white and blue to the theme I used some paper straws in patriotic colors.

But if you wanted to do this for a birthday or any special day you could vary up the straw color and have a S'more's cupcake that's perfect for any occasion.

What you'll need:

Ingredients for Graham Cracker Crumbs (for the bottom of the cupcake):

10 Graham Crackers

1 half stick of butter

2 teaspoons of cinnamon

1/2 cup of sugar

 

Ingredients for Cupcakes:

1 box of  Devil's Food Cake Mix

2 cups of semi-sweet chocolate chips

1 bag of large marshmallows

3 eggs

1 cup of water

1/2 cup of vegetable oil

18 paper cupcake molds/liners

Vanilla icing

Let's get started.

Preheat the oven to 350 degrees.

First, combine the graham crackers, sugar, butter (slightly melted) and cinnamon into the mixer.

Beat on low, then medium until nicely blended. The mixture should clump together.

Using a tablespoon, scoop the sticky graham cracker crust mixture and press it into the bottom of each cupcake liner.

Once all cupcake liners have graham cracker pressed into the bottom set the tray aside.

 

 

The Cupcake Batter

Combine the cake mix, eggs, vegetable oil and water in the mixer and beat on low.

Add in the chocolate chips.

 

Pour the batter into the cupcake molds. Place in the oven and cook for 16-18 minutes.

Let the cupcakes cool.

 

Ice the cupcakes (I used store-bought icing. But you may want to make your own).

Cut the straws in half and use them to pierce two large marshmallows like a kabob.

Light a burner on the stove so the flame is medium. Pass the marshmallows through the flame until they are roasted into a golden brown.

Insert the straw with toasted marshmallows into the frosted cupcake, and serve.

You can also decorate the top of the cupcake with crumbled graham crackers and chocolate chips to complete the S'more's look.
