There's something about crumb cake.
For me, it's all about the sweet, crunchy topping.
For my kids, it's the moist, cinnamon vanilla tasting cake.
I was thrilled to recently come across a crumb cake recipe on www.food.com that's super easy and delicious too.
And it has an unexpected ingredient that I swear made the crumble topping so much sweeter--pancake mix.
This recipe can be made as a cake, but I decided to make muffins out of them instead since my kids love having their own individual ones.
Crumb cake muffins go great with sliced fruit, like strawberries, and a little fresh whipped cream.
Let's get started.
Preheat oven to 350 degrees. Use non-stick spray on your muffin or cake mold.
Ingredients
Cake
1/2 cup margarine or 1/2 cup butter
1 cup sugar
2 large eggs
3/4 cup milk
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
Crumb Topping
1/2 cup margarine or 1/2 cup butter
1 cup sugar
2 cups biscuit mix or pancake mix
2 teaspoons cinnamon
1/4-1/2 cup powdered sugar
Directions for cake batter:
Cream together butter and sugar in a bowl.
Beat in eggs and milk.
In a second bowl, mix flour and baking powder together.
Then add it to the butter/sugar/egg/milk mixture.
Stir in vanilla.
Pour into the muffin or cake mold. The batter makes about 12 medium to large muffins.
Directions for crumb topping:
Combine butter, sugar, cinnamon and pancake or biscuit mix into a bowl.
Sprinkle over the batter in the muffin tin or cake pan.
Bake at 350 degrees for 30 minutes or until done.
Top with 1/4 -1/2 cup of powdered sugar when cool.
